During the Christmas season, these pancake balls are especially popular, but they are also delicious all year long! These pancakes are delicious and a bit more fun than regular pancakes.

Eggs

Buttermilk

Baking soda is activated by the acid in buttermilk, which is why this dish is so fluffy! It is important that you do not skip the buttermilk.

Gluten-free all purpose flour

This recipe ebelskivers can be made with normal all-purpose flour or gluten-free flour.

Baking soda

The ebelskiver rises due to the addition of baking soda and baking powder. For extra height, both are required in this recipe.

What are Ebelsivers and how do they work?

Step 1: Whisk together egg yolks, buttermilk, and sugar until combined.

Step 2: A large bowl should be used to mix the dry ingredients. Combine egg yolk mixture with oil. 30 minutes should be allowed for the mixture to rest.

Step 3: A small bowl of egg whites is whisked together with an electric mixer until stiff peaks form. Fold the egg whites into the pancake batter until they form stiff peaks.

Step 4:  Prepare the ebelskiver pan by heavily greasing it with hot oil. Make sure each cup is 3/4 full before pouring.

Step 5: A knitting needle or wooden skewer can be used to form a ball of batter once it starts bubbling. Make sure the needle inserted in the center comes out clean after turning until golden brown

Step 6: You can serve it with jam, chocolate, maple syrup, or simple syrups, or you can sprinkle it with powdered sugar.

The ebelskiver is best served with melted butter for a savory flavor.
